Ingredients: 2 Eggplants 1 Egg 2 Tbsp Harissa 5 Garlic Chopped Fresh squeezed lemon 1/4 Cilantro chopped 3 Tbsp vinegar 2 Tbsp olive oil 1 tsp paprika Salt and Pepper to taste Oil for frying
Instructions: 1. Cut eggplants in to thin circles. 2. Salt eggplants and place in a strainer for 30 min. 3. In a bowl scramble 1 egg. Add eggplant. 4. Deep Fry eggplant. 5. Mix all ingredients in a bowl. Add fried eggplant and serve.
