Ingredients:
8-10 Pieces of Chicken
5 Potatoes Diced
4 Sweet Potatoes Diced
2-3 Large Onions Sliced
1 Jar Silan
Water
Paprika
Cumin
Salt & Pepper
Insturctions
1. Rub chicken with spices.
2. In a Oven Pan Place potatoes and put chicken on top.
3. Pour Silan over Chicken and potatoes.
4. Add onions.
5. Add 1/2 Cup of water. (Depending on how much chicken may need less)
6. Cover and bake at 375* for 3 hours.
7. Remove cover and bake for additional 45 min

Spicy Moroccan Fish
Recipe: Liora's Kitchen |
5 Pieces of Talapia
2 Jalapeno Peppers Sliced by preference
2 Red Peppers sliced into strips
1 Cilantro
7 Pieces of Garlic cut in half
1 Tbsp Tomato Paste
1 Tbsp Paprika
1 Tbsp Salt
1 Tbsp Harissa
1/2 Cup of oil
2 Cups of water
Instructions:
1. Add all vegetables and spices into a pan. Cover and cook for 15 min until vegetables start to soften.
2. Add fish and continue to cook covered for an additional 15 min.
3.Remove lid and continue to cook until sauce starts to thicken.
4. Add more cilantro 15 min before ready.

3 Onions
5 Tbsp oil
3 Green Peppers
2 Red Peppers
3 Tomatoes
T Tbsp Salt
1/2 Tbsp Pepper
1 Tbsp Cumin
1 Bay Leave
4 Tbsp Tomato paste ( with a little water mixed in just to make it not to thick but not watery either)
Instructions:
1. Chop onions and fry for 10 min.
2. Chop Peppers and add to pan with onions cover and cook for an additional 10 minutes.
3. Chop tomatoes add to pan plus all the rest of the ingredients.
4. Cover and cook on medium heat for another 15-20 min. ( Mix a couple of time so it doesn't stick)

Delicious Oreo Cupcakes
Ingredients:
Cupcake: ( Reciepe: The Gorgeous Gourmet)
2 1/2 Cups of Cake Flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter
1 1/4 cups of sugar
2 eggs
1/3 + 2 tbsp sour cream
1/4 cups of oil
1 teaspoon vanilla extract
3/4 cup crushed Oreo
Frosting: ( Reciepe: Examiner)
2-8 ounce Cream Cheese
2 cups powdered sugar
16 ounce container of cool whip
Mini Oreos (optional)
Instructions:
Cupcake:
1. Preheat oven to 350*
2. Line cake pan with liners
3. Sift dry ingredients besides sugar in a medium bowl.
4. With an electric mixer cream butter and sugar and it becomes light and fluffy.
5. Add in eggs one at a time
6.Add oil, sour cream and vanilla.
7. Mix all ingredients well
8. Fold in crushed Oreo
9. Fill cupcakes pans (3/4 not till the top)
10. Bake for 15-20
11. Cool before icing
Frosting:
1. Whip together sugar and cheese.
2. Add cool whip and beat together.
3. Once Cupcake cooled top with frosting.
4. Sprinkle with crushed Oreo and top with mini Oreo

2 Baskets of Mushroom ( I used Baby Bella and Regular) Sliced
3 Large Onions Chopped
2 Green Onions Chopped
3/4 Cup of Oil
1/4 Cup of Water
3 Eggs
1 1/2 Cups Self Rising Flour
2 Full Tbsp of Onion Flavored Soup Powder
Salt and Pepper
Instructions:
1. Saute Onions in a little bit of olive oil until transparent.
2. Add all ingredients ending with the flour.
3. Mix Adjust Salt
4. Preheat oven to 350 F
5. Bake for 50 min or until golden brown

Fried Eggplant Salad in Harissa Sauce
Ingredients:
2 Eggplants
1 Egg
2 Tbsp Harissa
5 Garlic Chopped
Fresh squeezed lemon
1/4 Cilantro chopped
3 Tbsp vinegar
2 Tbsp olive oil
1 tsp paprika
Salt and Pepper to taste
Oil for frying
Instructions:
1. Cut eggplants in to thin circles.
2. Salt eggplants and place in a strainer for 30 min.
3. In a bowl scramble 1 egg. Add eggplant.
4. Deep Fry eggplant.
5. Mix all ingredients in a bowl. Add fried eggplant and serve.

Ingredients:
2 Zucchini
1 Eggplant
3-4 Spicy Peppers
5-6 Garlic
Lemon Juice
Salt to Taste
Oil For Frying
Instructions:
1. Cut Eggplant into medium squares.
2. Pour salt on eggplant and put in strainer for 30 min.
3. Heat oil and deep fry eggplant.
4. In separate pan fry zucchini until translucent.
5. Put Peppers in food processor and chop.
6. Add lemon juice and salt to crush peppers. Adjusting salt and lemon according to taste.
7. In a bowl put Zucchini and eggplant, add spicy pepper sauce and serve.

2 Yellow Pepper
3 Orange Pepper

Chicken and Cauliflower Patties in Artichoke and Lemon Sauce
Ingredients:
Patties:1 cauliflower cut into pieces
1 lb ground chicken
1 onion chopped
1 tsp nutmeg
2 tbsp lemon zest
3 tbsp lemon juice
3/4 cup breadcrumbs
2 eggs
5 sage leaves chopped (optional, can replace with parsley)
Salt & pepper to taste
Sauce:
1 pack artichokes (frozen) cut into medium pieces.
4 tbsp olive oil
1/2 cup fresh squeezed lemon
3 cups chicken broth
salt and pepper to taste
Instructions:
1.Cook cauliflower in water and olive oil for 30 minutes. Once cooked and soft drain.
2.Mash cauliflower and mix in with chicken, onion, nutmeg, sage, lemon zest,eggs and half of the bread crumbs. mix and place in fridge for 30 min.
3 make patties from mixture, dip in the remaining breadcrumbsand fry till golden.
3. In a wide flat pot bring the sauce ingredients to a boil. Once boiled cook for an additional five minutes with the pot covered.
4. Add patties to pot. ( making only one layer)

Spicy Fried Eggplant Salad
Ingredients:
1 Eggplant
4 Spicy Long Green Peppers
2 Red Bell Pepper
3 Tomatoes
4 Garlic Chopped
1/2 Cup Fresh Squeezed Lemon
Oil for Frying
1 tsp salt
Instruction:
1. Cut eggplant and peppers (including skin) into squares.
2. Deep fry eggplant in oil and remove. Place on paper towel.
3. Deep fry together the spicy and red peppers. Place on paper towel.
4. Blanche, peel skin and fry tomatoes in a separate pot in a little oil.
5. Mix eggplant, peppers and garlic together.
6. Add lemon juice, tomatoes and salt
7. Serve Cold

Nonas Fried Cauliflower in Lemon Sauce
This is my Grandma Nona's recipe. It is simple an delicious!!!
Ingredients:
1 Cauliflower
1/2 Cup cilantro
3 Garlic Sliced
Lemon ( I used Juice & Real)
Olive Oil
Salt & Pepper
Instructions:
1. Heat olive oil in pot and saute garlic.
2. Add cauliflower until golden brown
3. Add lemon according to taste ( You can add a little water if to sour)
4. Season with salt & pepper
5. Add Cilantro
Red Pepper and Corn Salsa
Ingredients:
2 cups corn (Frozen Or Canned)
1/3 cup chopped red onion
1/4 cup chopped red pepper
Chopped Cilantro
2 Tbls fresh lime juice
1/2 tsp salt
Chopped Jalapeno (optional)
Ingredients:
Mix all ingredients. Chill 30 min before serving
Mango salsa
Ingredients:
2 cups pitted mango
1 cup chopped red bell pepper
2/3 cup chopped red onions
2 tablespoons fresh lime juice
4 teaspoons olive oil

Mix all ingredients together season with salt and pepper to taste .

Delicious Fish Patties!!
- Fish:
- In food processor mix fish with garlic and onion until fully chopped and mushed. Add all ingredients and mix. Let sit for 10 min.
- Make mixture into patties and fry.
- Sauce:
- Heat oil in large pan and chop 3 garlic cloves.
- Cut peppers into strips add to pan. Cut carrots to preferable size and add to pan. Cut hit pepper into circles add to pan with 2 remaining garlic cloves and can of chick peas. Add fish spice and cover till vegetables turn soft.
- Add tomato sauce and water ( water= amount of sauce). Add salt fish seasoning. let cook.
- Adjust sauce to taste and add patties.
- Garnish with cilantro
